Medjool Date and Kiwifruit Salsa with Sea Scallops

Recipe July 11 Medjool Date and Kiwifruit Salsa with Sea Scallops 


1 cup pitted, chopped Medjool dates
4 kiwifruit, peeled and chopped
¼ cup finely chopped red onion
¼ cup finely chopped red bell pepper
2 tablespoons chopped fresh cilantro
1 jalapeño, seeded and finely chopped
1 tablespoon lemon juice
½ teaspoon salt, divided ¼ teaspoon pepper, divided
1 tablespoon olive oil
1½ pounds sea scallops (about 18 large scallops)
Lemon curls and cilantro leaves, for garnish (optional)



In a bowl, combine dates, kiwifruit, onion,
bell pepper, cilantro, jalapeño, lemon juice,

¼ teaspoon salt and 1/8 teaspoon pepper.
Heat olive oil in a skillet over medium-high heat.

Rinse scallops and pat dry with a paper towel.

Sprinkle with the remaining salt and pepper.

Sauté the scallops for 2-3 minutes on each side,
or until they are opaque and lightly browned.
Serve immediately with the salsa. Garnish
with lemon curls and cilantro leaves. Makes 4-6 servings.
